5 Tips for Making Pie Crust

A tender, buttery crust is the foundation for phenomenal pie, and these tips don’t flake out on bringing the flavor.

1. Cold Ingredients Are Key

Use cold, refrigerated butter and place the chunks in the dough mix. Wrap and chill your dough immediately after mixing so the flour can absorb the liquid.

2. Don’t Overmix the Dough

Be sure there are still butter chunks in the dough before placing it in the fridge (chill for at least 30 minutes).

3. Roll the Dough Quickly

Let the dough rest for 10-15 minutes after you take it out of the fridge. The dough should soften slightly but still be firm. Roll the dough quickly so that it doesn’t become too soft and start sticking.

4. Bake the Crust First

Bake the crust on its own before adding any filling to give it shape (and to make sure the crust doesn’t get soggy).

5. Protect the Edges of the Crust with Aluminum Foil

Prevent the outer edges of the crust from burning while baking by lining it with aluminum foil.
