Cadee Distillery was created by Colin Campbell, a Scotsman with a Clan history spanning centuries of distilling and blending history, now transplanted in the Pacific Northwest. Cadee is a Gaelic word which translated means Pure and Clean. When it comes to our creations we keep our minds open to new possibilities, new production processes, new combinations of flavors, new ways of sharing and enjoying great spirits. We work with a range of partners to create exceptional American Maritime whiskeys by aging and barreling our spirits in the rare Isle Of Whidbey climate, utilizing water featuring unique, salty coastal minerals. We source the best cooperage oak in the world with specific char and toast levels on our barrels, and individually sample every cask we use in each of our whiskies. We are fanatical about quality and believe that every stage of the process has the potential to add to the finished Exceptional Maritime Whiskeys Deceptivus Straight Bourbon is finished in imported Portuguese Port wine casks for an award-winning spirit. We guide each batch's conditioning, blending our handcrafted bourbon in a single barrel at a time. Its typically aged for at least 3 years. While we lose about 20% of the spirit to absorption and evaporation, or the Angel's Share Once it's deemed ready, we finish our bourbon in 60 gallon imported 20 yr old French Oak ruby port wine casks from Portugal, which adds subtly distinct flavor nuances that enhance the whiskey without challenging it. Our port barrel finishing process lasts between 3 to 6 mon.
